  • 1 Large Baking Dish or Roasting Pan Ensure it has high enough sides (at least 2 inches) to contain juices

Ingredients
  

  • 4 chicken breasts
  • 4 medium potatoes cut into wedges
  • 3 lemons
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C)
  • In a bowl, mix olive oil, juice of 2 lemons, garlic, oregano, and thyme
